From 1979 – 1990 Alan travelled to various destinations in Italy to train under the watchful eyes of master chefs and authors Marchella Hazan and Guliano Bugialli. It was on these trips that Chef Alan Gaeta honed his craft and began to specialize in regional Italian dishes. Thus his repetiore has become extremely diverse and appeals to individuals with the most demanding Italian palettes.
